Mini Egg and Hash-brown Bites

These are great to make in advance and freeze.  They can be re-heated in the toaster oven or the microwave.  They’re also very inexpensive to make.  It costs about $1.50 to make 2 dozen. I’ll put a few into a plastic container with some ketchup for Jay’s breakfast tomorrow and he can take them with him to work.

Recipe:

1/2 bag (15oz) frozen shredded breakfast potatoes, defrosted
3 eggs, beaten
1/2 cup of shredded cheese (I used cheddar)
1/2 small onion, small dice
1/4 t garlic powder
Salt and pepper to taste

Pre-heat oven to 350. In a large bowl, beat the eggs until well mixed. Add in potatoes, cheese, onion and garlic powder. Mix until all ingredients are combined. Add salt and pepper to taste. Spoon mixture into greased mini muffin pan. Bake for 20-25 minutes.
